thanks for this - cooking with feminists sounds like a Half Man Half Biscuit song, but I loved the lemon solution - squeezing it together.

Usually, but I think it's an acceptable variation to leave them unpeeled. Earthier. Like brown sugar. Gosh, now that you mention it, I'm not sure... but it certainly doesn't seem to be a hard-core, polarizing debate like smooth vs. chunky latkes.

unpeeled apples just seems wrong. It isn't what I was taught. But hey, I can be flexible.
