I made stock from the bones, took them out, added everything else except the lettuce, and put in some chili pepper paste, tom yum base, half a lemon and a dash of pepper sauce. And when it was hot poured it over the lettuce.
Nom nom nom. Perfect soup for a day still threatening cold rain.
I bet it was even nearly healthy, except the duck fat.
